Almond Pikelets / Pancakes



Ingredients:

3 "No Egg" (Allow to sit for a while to thicken)
1 Cup Almond Meal
1/2 cup GF Flour (I use Choices)
1 Tbs Cream of Tartar
1/2 Tsp Bicarb Soda
1 1/2 Tbs Coconut oil (Plus a touch more for greasing)
3 Tbs Honey
About 1 Cup Rice Milk.


Make it:

1. Mix it all together in a big bowl, I found thin pancakes work better than thick ones. So add the Rice Milk slowly and keep an eye on consistency.

2. Put a touch of coconut oil on a scrunched up bit of grease proof paper. Rub it on a med heat frying pan. Spoon on some mixture.... if the bubbles come thru thats the best consistency!

3.  Once they are cooked on either side put them on a cooling rack for a little bit before eating.

4. Repeat step 2 and 3 until all done... eat them as you go, too yummy to wait till they're all done.


*NOTE: Play with the amounts to make it the right consistency for you, 
GF flours and Almond flours need more or less liquid depending on what type you have available
